A simple and fast recipe for chicken enchiladas that anyone can make.

- 2 cups cooked shredded chicken
- 1 cup enchilada sauce
- 8 flour tortillas
- 1 cup shredded cheese
- 1/2 cup diced onions
- 1/2 cup sour cream
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a pan, heat olive oil over medium heat and sauté onions until soft.
- Add shredded chicken and half of the enchilada sauce to the pan. Mix well.
- Fill each tortilla with the chicken mixture and roll them up.
- Place the rolled tortillas in a baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with cheese.
- Bake for 20 minutes or until cheese is melted.
- Serve with sour cream on the side.
Notes
- Feel free to add your favorite toppings.
- Use corn tortillas for a gluten-free option.
- Leftovers can be refrigerated for up to 3 days.
