- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can black beans, drained
- 1 can corn, drained
- 1 can diced tomatoes
- 1 can tomato sauce
- 1 packet taco seasoning
- 2 cups beef broth
- 1 cup water
- 1 cup shredded cheese
- 1 avocado, diced
- 1/4 cup cilantro, chopped
Instructions
- In a large pot, brown the ground beef over medium heat.
- Add the chopped onion and minced garlic. Cook until the onion is soft.
- Stir in the taco seasoning, black beans, corn, diced tomatoes, tomato sauce, beef broth, and water.
- Bring the mixture to a boil. Reduce heat and simmer for 20-30 minutes.
- Serve hot, topped with cheese, avocado, and cilantro.

- Adjust seasoning to taste.
- Can be made in a slow cooker for 4-6 hours on low.
