A hearty and flavorful beef stew that is perfect for cold weather, packed with tender beef, vegetables, and rich broth.

- 2 lbs beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 3 medium carrots, sliced
- 2 medium potatoes, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Season the beef cubes with salt and pepper, then brown them in batches in the pot.
- Remove the beef and set aside. In the same pot, add onions and garlic, sauté until softened.
- Add tomato paste, Worcestershire sauce, and thyme, stirring for 1 minute.
- Return the beef to the pot, add beef broth, carrots, potatoes, and bay leaf.
- Bring to a boil, then reduce heat to low and cover. Simmer for 1.5 to 2 hours until beef is tender.
- Adjust seasoning with salt and pepper before serving.
Notes
- For a thicker stew, you can add a cornstarch slurry towards the end of cooking.
- Feel free to add other vegetables like peas or green beans.
- This stew can be made a day ahead and tastes even better the next day.
