Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 3 medium carrots, sliced
  • 2 medium potatoes, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Season the beef cubes with salt and pepper, then brown them in batches in the pot.
  3. Remove the beef and set aside. In the same pot, add onions and garlic, sauté until softened.
  4. Add tomato paste, Worcestershire sauce, and thyme, stirring for 1 minute.
  5. Return the beef to the pot, add beef broth, carrots, potatoes, and bay leaf.
  6. Bring to a boil, then reduce heat to low and cover. Simmer for 1.5 to 2 hours until beef is tender.
  7. Adjust seasoning with salt and pepper before serving.

Notes

  • For a thicker stew, you can add a cornstarch slurry towards the end of cooking.
  • Feel free to add other vegetables like peas or green beans.
