Ingredients

- 2 medium sweet potatoes, diced
- 1 bell pepper, chopped
- 1 small onion, diced
- 2 tablespoons olive oil
- 4 large eggs
- Salt to taste
- Pepper to taste
- 1 teaspoon paprika
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced sweet potatoes, bell pepper, and onion.
- Cook for about 10-15 minutes, stirring occasionally until sweet potatoes are tender.
- Season with salt, pepper, and paprika.
- Make four wells in the mixture and crack an egg into each well.
- Cover the skillet and cook until eggs are set, about 5-7 minutes.
- Serve warm.

- You can add other vegetables like spinach or kale.
- Adjust seasoning to your taste.
