- 4 large green bell peppers, chopped
- 1 lb ground beef
- 1 cup cooked rice
- 1 can (15 oz) diced tomatoes
- 4 cups beef broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- In a large pot, brown the ground beef over medium heat until fully cooked.
- Add the chopped onions and garlic, cooking until softened.
- Stir in the chopped green peppers, diced tomatoes, cooked rice, beef broth, and Italian seasoning.
- Bring the mixture to a boil, then reduce heat and let simmer for 30 minutes.
- Season with salt and pepper to taste.
- If desired, serve topped with shredded cheese.

- For a vegetarian version, substitute ground beef with lentils or a meat alternative.
