Description

A delightful strawberry cake topped with cream cheese whipped cream frosting that is perfect for babies and young children.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups sugar
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 ½ cups fresh strawberries, pureed
  • 8 oz cream cheese, softened
  • 1 cup heavy whipping cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract and strawberry puree.
  5. In another bowl, combine the flour and baking powder, then gradually add to the wet mixture, alternating with milk.
  6. Pour the batter evenly into the prepared cake pans.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  9. For the frosting, beat the cream cheese until smooth, then gradually add the powdered sugar and vanilla extract.
  10. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  11. Once the cakes are completely cool, spread the frosting between the layers and on top of the cake.
  12. Decorate with fresh strawberries if desired.
