Sopapilla Cheesecake Bars are a delightful dessert with a creamy filling and a flaky crust.


Ingredients

  • 2 8-oz packages crescent rolls
  • 1 1/4 cups white sugar
  • 1 tablespoon cornstarch (optional, for thicker filling)
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/2 cup unsalted butter, softened (to replace cream cheese)
  • 1/4 cup unsalted butter, melted (for topping)
  • 2 teaspoons cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch pan with non-stick spray.
  2. Unroll one package of crescent rolls onto the bottom of the pan. Pinch seams together and press to cover the pan evenly.
  3. In a large bowl, beat the softened butter until smooth. Mix in 1 cup sugar, cornstarch, vanilla, and the egg until creamy.
  4. Pour the butter mixture over the crescent roll layer, smoothing it evenly.
  5. On a piece of parchment paper, unroll the second package of crescent rolls. Pinch seams together and gently roll out slightly to cover the top of the filling.
  6. Place the top layer of crescent rolls over the filling. Spread the melted butter evenly over the top.
  7. In a small bowl, combine the remaining 1/4 cup sugar with cinnamon and sprinkle over the top.
  8. Bake for 35–40 minutes, until golden brown. Cool to room temperature, then chill in the fridge for at least 3 hours before serving.

Notes

  • Cornstarch is optional; it thickens the filling.
  • Store in an airtight container in the fridge up to 4 days, or freeze and thaw overnight.
