Sopapilla Cheesecake Bars are a delightful dessert with a creamy filling and a flaky crust.

- 2 8-oz packages crescent rolls
- 1 1/4 cups white sugar
- 1 tablespoon cornstarch (optional, for thicker filling)
- 1 teaspoon vanilla extract
- 1 large egg
- 1/2 cup unsalted butter, softened (to replace cream cheese)
- 1/4 cup unsalted butter, melted (for topping)
- 2 teaspoons cinnamon
Instructions
- Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch pan with non-stick spray.
- Unroll one package of crescent rolls onto the bottom of the pan. Pinch seams together and press to cover the pan evenly.
- In a large bowl, beat the softened butter until smooth. Mix in 1 cup sugar, cornstarch, vanilla, and the egg until creamy.
- Pour the butter mixture over the crescent roll layer, smoothing it evenly.
- On a piece of parchment paper, unroll the second package of crescent rolls. Pinch seams together and gently roll out slightly to cover the top of the filling.
- Place the top layer of crescent rolls over the filling. Spread the melted butter evenly over the top.
- In a small bowl, combine the remaining 1/4 cup sugar with cinnamon and sprinkle over the top.
- Bake for 35–40 minutes, until golden brown. Cool to room temperature, then chill in the fridge for at least 3 hours before serving.
Notes
- Cornstarch is optional; it thickens the filling.
- Store in an airtight container in the fridge up to 4 days, or freeze and thaw overnight.
