- 4 chicken breasts
- 1 cup rice
- 2 cups chicken broth
- 1 lemon, juiced
- 2 teaspoons dried thyme
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a pan over medium heat.
- Season chicken breasts with salt, pepper, garlic powder, and onion powder.
- Sear the chicken in the pan for 3-4 minutes on each side.
- In the slow cooker, combine rice, chicken broth, lemon juice, and thyme.
- Place the seared chicken on top of the rice mixture.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours.
- Before serving, fluff the rice with a fork and mix in the chicken.
Notes
- You can add vegetables like peas or carrots for extra nutrition.
- For a stronger lemon flavor, add lemon zest.
- Store leftovers in an airtight container in the fridge.
