  • 1 cup bell pepper, diced
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add the diced onion and bell pepper, and sauté until softened.
  3. Stir in the taco seasoning.
  4. Add the black beans, corn, diced tomatoes, and beef broth.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Taste and adjust seasoning with salt and pepper.
  7. Serve hot, topped with shredded cheese.
