Ingredients

  • 2 medium zucchinis, diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon dried oregano
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add diced zucchini and cook for 5 minutes.
  4. Stir in diced tomatoes and oregano.
  5. Season with salt and pepper.
  6. Simmer for 15 minutes until thickened.
