  • 2 tablespoons butter, melted
  • 1 tablespoon lemon juice
  • ½ teaspoon vanilla extract
  • ¼ cup light brown sugar
  • ½ teaspoon ground cinnamon
  • Dash of salt
  • 1 cup water

Instructions

  1. In a medium bowl, combine flour, oats, brown sugar, cinnamon, salt, and butter. Use a fork or pastry blender to mix until it forms small crumbs. Refrigerate while preparing the apples.
  2. Lightly spray the Instant Pot with non-stick cooking spray.
  3. In the pot, stir together melted butter, lemon juice, vanilla, brown sugar, cinnamon, and salt. Add chopped apples and toss to coat. Pour in the water.
  4. Sprinkle the crumb mixture evenly over the apples.
  5. Seal the lid and cook on High Pressure (Manual) for 1 minute.
  6. When the timer beeps, carefully quick release the pressure. Start slowly to ensure only steam escapes, then fully release.
  7. For a crunchier topping, spoon servings into an oven-safe dish and broil for 1–2 minutes until golden.
