This Incredible Apple Bread is a delicious and moist treat packed with shredded apples and warm spices.

- 4 apples, peeled and cored (use your favorite variety)
- 1 cup sugar
- ½ cup vegetable oil
- 2 eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon ground cinnamon
- ½ teaspoon ground nutmeg
Instructions
- Preheat the oven to 350°F (175°C). Grease 1 large loaf pan or 4–5 mini loaf pans, depending on preferred size.
- Shred the apples using a grater.
- Place the shredded apples and sugar in a large mixing bowl and let sit for 5 minutes.
- Add the vegetable oil, eggs, and vanilla extract to the apple mixture. Stir to combine.
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Gradually stir the dry ingredients into the wet ingredients until just combined. Do not overmix.
- Pour the batter evenly into the prepared pan(s).
- Bake for 30 minutes for mini loaves or about 55 minutes for a large loaf, or until a toothpick inserted in the center comes out clean.
- Remove from the oven and let cool slightly before slicing and serving.
