- 1/2 cup feta cheese, crumbled

- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp olive oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add diced chicken and cook until browned and cooked through.
- Stir in garlic and oregano, cooking for an additional minute.
- Add orzo and chicken broth, bringing to a boil.
- Reduce heat and simmer until orzo is tender and liquid is absorbed, about 10-12 minutes.
- Stir in cherry tomatoes, olives, and feta cheese.
- Remove from heat and garnish with fresh parsley before serving.
Notes
- For added flavor, marinate the chicken in lemon juice and herbs before cooking.
