A delicious hibachi-style chicken fried rice recipe.
Ingredients

- 2 cups cooked rice
- 1 cup diced chicken breast
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Add diced chicken and cook until browned.
- Push chicken to the side and scramble eggs in the pan.
- Add mixed vegetables and cooked rice to the pan.
- Pour soy sauce over the mixture and stir well.
- Add chopped green onions, salt, and pepper.
- Cook for an additional 2-3 minutes, stirring frequently.
Notes
- Use leftover rice for best results.
- Adjust soy sauce to taste.
- Add protein of your choice, like shrimp or tofu.
