Ingredients

  • 1 lb flank steak
  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook quinoa according to package instructions using water.
  2. While quinoa is cooking, season the flank steak with salt, pepper, and oregano.
  3. Grill or pan-sear the steak over medium-high heat for about 5-7 minutes on each side, or until desired doneness.
  4. Let the steak rest for a few minutes before slicing it thinly.
  5. In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, and olives.
  6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
