Healthy Cinnamon Roll Muffins that are delicious and easy to make.
Ingredients

- 1 1/2 cups whole wheat flour
- 1/2 cup rolled oats
- 1/4 cup coconut sugar
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup unsweetened applesauce
- 1/2 cup almond milk
- 1/4 cup melted coconut oil
- 1 tsp vanilla extract
- 1/4 cup chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix flour, oats, coconut sugar, baking powder, cinnamon, and salt.
- In another bowl, combine applesauce, almond milk, melted coconut oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in chopped walnuts if using.
- Divide the batter into a muffin tin lined with paper liners.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store leftovers in an airtight container.
- These muffins freeze well.
- Experiment with different nuts or add raisins for extra flavor.
