Ingredients

  • 1/2 cup rolled oats
  • 1/4 cup coconut sugar
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup unsweetened applesauce
  • 1/2 cup almond milk
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix flour, oats, coconut sugar, baking powder, cinnamon, and salt.
  3. In another bowl, combine applesauce, almond milk, melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in chopped walnuts if using.
  6. Divide the batter into a muffin tin lined with paper liners.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool before serving.
