- 1/2 cup unsalted butter
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 cup Dutch-process cocoa powder
- 1/4 tsp salt
- 1 tsp vanilla extract
- 2 large eggs, room temperature
- 1/2 cup all-purpose flour
- 1 tbsp cornstarch
- Ganache Topping
- 1/4 cup heavy cream
- 4 oz semisweet chocolate, chopped
- Pinch of salt
- Topping
- 2–3 tbsp rainbow candy-coated chocolate chips (Wilton rainbow chips or similar)
Instructions
- Preheat oven to 350°F. Line an 8×8-inch pan with parchment paper.
- In a medium saucepan over low heat, melt the butter. Stir in the granulated sugar, brown sugar, cocoa powder, and salt until smooth and well combined.
- Transfer the mixture to a large bowl. Whisk in the vanilla extract.
- Add the eggs one at a time, whisking well after each addition until the batter becomes thick and glossy.
- Fold in the flour and cornstarch until just combined. Do not overmix.
- Spread the batter evenly into the prepared pan.
- Bake for 20–22 minutes, until the edges are set and the center has a slight jiggle.
- Let the brownies cool completely. Once cooled, flip them over and remove the parchment paper so the flat bottom becomes the top for a smooth ganache finish.
- Heat the heavy cream in the microwave for about 30 seconds until hot but not boiling.
- Pour over the chopped chocolate and let sit for 1 minute.
- Add a pinch of salt and stir until smooth.
- Spread the ganache evenly over the cooled brownies.
- Sprinkle the rainbow candy-coated chips over the ganache while it is still soft.
- Refrigerate for 1–2 hours until fully set.
- Slice into bars or squares, wiping the knife between cuts for clean edges.
Notes
- Yields 8 bars or 16 squares.
- Chill thoroughly before slicing for the cleanest presentation.
- Store in an airtight container in the fridge for best texture.
