Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups apples, peeled and diced
  • 1 teaspoon cinnamon
  • 1/2 cup brown sugar
  • 1/2 cup oats
  • 1/4 cup flour
  • 1/4 cup butter, softened

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of mini cheesecake pans.
  3. In another bowl, beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
  4. Pour the cream cheese mixture over the crusts in the mini pans.
  5. In a separate bowl, combine diced apples, cinnamon, brown sugar, oats, flour, and softened butter to make the apple crisp topping.
  6. Distribute the apple crisp mixture evenly over the cheesecakes.
  7. Bake for 20-25 minutes or until the cheesecakes are set.
  8. Let cool before removing from pans and refrigerate for at least 2 hours before serving.

Notes

  • For a gluten-free version, use gluten-free graham crackers.
  • These can be made a day in advance for convenience.
