Ingredients

  • 6 cups fresh peaches, sliced
  • 1 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons cornstarch
  • 1 tablespoon butter, cut into small pieces
  • 1 package refrigerated pie crusts (2 crusts)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine sliced peaches, sugar, lemon juice, salt, cinnamon, and cornstarch. Mix well.
  3. Roll out one pie crust and place it in a 9-inch pie pan.
  4. Pour the peach mixture into the pie crust and dot with butter.
  5. Roll out the second pie crust and place it over the filling. Seal and flute the edges.
  6. Cut slits in the top crust to allow steam to escape.
  7. Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  8. Let cool before serving.
