Description
Date Filled Oatmeal Cookies are deliciously soft cookies with a sweet date filling.
Ingredients

- 1 cup butter
- 1/2 cup granulated sugar
- 1 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 2 cups rolled oats
- 2 cups dates
- 1 cup water
- 1/4 cup sugar (optional)
Instructions
- Cream together butter and both sugars in a large mixing bowl.
- Add in eggs and vanilla, mix until combined.
- In a separate bowl, combine flour, baking soda, baking powder, cinnamon, and salt.
- Add dry ingredients to butter mixture, stir until combined.
- Add rolled oats, stir until combined. Use a wooden spoon or your hands for easier mixing.
- Scoop a heaping tablespoon of dough, roll into a ball, and flatten to 2.5 inches wide on a baking sheet.
- Bake at 350°F for 10 to 12 minutes until slightly soft in the middle.
- Allow cookies to cool before adding date filling.
- For date filling, combine chopped dates, water, and optional sugar in a saucepan. Bring to a boil and stir until thickened.
- Spread date filling on the flat side of a cookie and sandwich with another cookie flat-side-down.
Notes
- Store cookies in an airtight container in the fridge for 5 to 7 days, layering with parchment paper.
- Freeze cookies with parchment paper between rows for 2 to 3 months. Thaw in the fridge before serving.
- Omit sugar in the date filling for less sweetness.
