Description

Ingredients

  • 2 tbsp powdered sugar
  • 1 egg, at room temperature
  • 1/2 tsp vanilla extract
  • 1/4 tsp almond extract
  • 2 1/3 cups all-purpose flour
  • 1/4 tsp cream of tartar (optional)
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/2 cup butter, softened (for icing)
  • 2 cups powdered sugar (for icing)
  • 2 tbsp heavy cream, cold (for icing)
  • 1/4 tsp almond extract (for icing)
  • 1 tsp vanilla extract (for icing)
  • Pink gel food coloring

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the butter, oil, granulated sugar, and powdered sugar until smooth.
  3. Add the egg, vanilla extract, and almond extract, mixing until fully incorporated.
  4. Mix in the flour, salt, cream of tartar (if using), and baking powder until combined.
  5. Scoop out 9 cookie balls and place them on the prepared baking sheet. Flatten each ball to about 1/2 inch thickness.
  6. Bake for 9–10 minutes, then cool on the baking sheet for 20 minutes before transferring to a wire rack.
  7. Cream together the butter, powdered sugar, vanilla extract, and almond extract for the icing until smooth.
  8. Add cold heavy cream and beat on medium speed until light and fluffy.
  9. Add a tiny amount of pink gel food coloring and mix until you reach your desired shade.
  10. Spread the icing generously on the fully cooled cookies.

  • Store frosted cookies in the fridge for up to 7 days.
  • Freeze in an airtight container for up to 2 months; thaw overnight in the fridge before serving.
  • Use room-temperature ingredients for proper cookie texture.
