Description
Deliciously soft and sweet Crumbl Sugar Cookies topped with pink almond icing.

- 1/2 cup butter, softened
- 1/4 cup oil
- 1/2 cup granulated sugar
- 2 tbsp powdered sugar
- 1 egg, at room temperature
- 1/2 tsp vanilla extract
- 1/4 tsp almond extract
- 2 1/3 cups all-purpose flour
- 1/4 tsp cream of tartar (optional)
- 1/4 tsp salt
- 1 tsp baking powder
- 1/2 cup butter, softened (for icing)
- 2 cups powdered sugar (for icing)
- 2 tbsp heavy cream, cold (for icing)
- 1/4 tsp almond extract (for icing)
- 1 tsp vanilla extract (for icing)
- Pink gel food coloring
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the butter, oil, granulated sugar, and powdered sugar until smooth.
- Add the egg, vanilla extract, and almond extract, mixing until fully incorporated.
- Mix in the flour, salt, cream of tartar (if using), and baking powder until combined.
- Scoop out 9 cookie balls and place them on the prepared baking sheet. Flatten each ball to about 1/2 inch thickness.
- Bake for 9–10 minutes, then cool on the baking sheet for 20 minutes before transferring to a wire rack.
- Cream together the butter, powdered sugar, vanilla extract, and almond extract for the icing until smooth.
- Add cold heavy cream and beat on medium speed until light and fluffy.
- Add a tiny amount of pink gel food coloring and mix until you reach your desired shade.
- Spread the icing generously on the fully cooled cookies.
Notes
- Store frosted cookies in the fridge for up to 7 days.
- Freeze in an airtight container for up to 2 months; thaw overnight in the fridge before serving.
- Use room-temperature ingredients for proper cookie texture.
- Don’t flatten cookies too much—1/3–1/2 inch thick is ideal.
- Ensure cookies are completely cool before frosting to prevent soggy icing.
