- 1/2 cup butter, softened
- 1/3 cup granulated sugar
- 3 tbsp powdered sugar
- 1 egg, room temperature
- 2 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/4 tsp salt
- 1 tsp baking powder
- 1/2 cup sprinkles (for rolling)
- 6 tbsp butter, softened (for buttercream)
- 1/4 tsp cake batter extract (clear)
- 1 cup powdered sugar (for buttercream)
- 3 tbsp heavy cream (for buttercream)
- Whipped cream (optional topping)
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Cream butter, granulated sugar, and powdered sugar until smooth.
- Mix in the egg and vanilla extract.
- Add flour, baking powder, and salt. Mix until just combined.
- Scoop 6 equal dough balls, roll between palms, coat in sprinkles, and place on the baking sheet. Gently flatten to about 3/4 inch thick.
- Bake for 11 minutes. Cool on the baking sheet for 10–15 minutes, then transfer to a rack to cool completely.
- Beat butter until smooth and fluffy for buttercream.
- Add powdered sugar, cake batter extract, and heavy cream. Whip 5–8 minutes, starting slow and increasing speed.
- Frost cooled cookies and top with whipped cream if desired.
Notes
- Do not overmix the dough to keep cookies soft.
- Use clear cake batter extract to maintain a bright white frosting.
