Description
Delicious frosted cookies inspired by Lucky Charms cereal.
Ingredients

- 1/2 cup butter, softened
- 1/2 cup light brown sugar
- 1 egg, room temperature
- 2 tsp vanilla extract or butter vanilla emulsion
- 1/2 tsp baking soda
- 1 & 1/3 cup flour
- 1/4 tsp salt
- 2/3 cup white chocolate chips
- 1/2 cup colorful marshmallow cereal pieces (optional)
- 4 oz cream cheese, softened
- 2 tbsp butter, softened
- 3 tbsp marshmallow cream
- 1/2 cup powdered sugar
- 1/2 tsp vanilla extract
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Cream the butter and brown sugar until light and fluffy.
- Mix in the egg and vanilla.
- Add flour, salt, and baking soda. Mix just until combined.
- Fold in white chocolate chips and marshmallow cereal pieces.
- Scoop 8 large cookie dough balls onto the baking sheet and flatten to about 1 inch thick.
- Bake for 11–12 minutes. Cool on the baking sheet for 20–30 minutes, then transfer to a rack.
- Cream together butter, cream cheese, and marshmallow cream for frosting.
- Add vanilla and powdered sugar. Whip until light and fluffy.
- Frost cooled cookies and top with extra marshmallow cereal pieces if desired.
Notes
- Store in an airtight container at room temperature for up to 3 days or in the fridge for up to 5 days.
- Let refrigerated cookies come to room temperature before serving.
