- 2 lbs beef chuck, cut into bite-sized pieces
- 4 medium potatoes, diced
- 1/2 cup unsalted butter
- 6 cloves garlic, minced
- 1 onion, chopped
- 1 cup beef broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tsp dried rosemary
Instructions
- In a large bowl, combine the beef, salt, pepper, thyme, and rosemary.
- In a skillet, melt the butter over medium heat and sauté the garlic and onion until fragrant.
- Add the beef to the skillet and brown on all sides.
- Transfer the beef to the crockpot and add the diced potatoes and beef broth.
- Cover and cook on low for 6-8 hours or until the beef is tender.
- Serve hot and enjoy!
Notes
- For extra flavor, add a splash of Worcestershire sauce.
- Feel free to add other vegetables like carrots or peas.
