Description

A simple and hearty beef stew made in a crock pot.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Brown the beef in batches, then transfer to the crock pot.
  3. Add carrots, potatoes, onion, and garlic to the pot.
  4. Stir in beef broth, tomato paste, thyme, salt, and pepper.
  5. Cover and cook on low for 8 hours or high for 4 hours.
  6. Serve hot and enjoy.
