Description
A simple and hearty beef stew made in a crock pot.
Ingredients

- 2 pounds beef chuck, cut into 1-inch pieces
- 4 carrots, sliced
- 4 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a skillet over medium heat.
- Brown the beef in batches, then transfer to the crock pot.
- Add carrots, potatoes, onion, and garlic to the pot.
- Stir in beef broth, tomato paste, thyme, salt, and pepper.
- Cover and cook on low for 8 hours or high for 4 hours.
- Serve hot and enjoy.
Notes
- Adjust seasoning to taste.
- Use fresh herbs for more flavor.
- Can add peas in the last 30 minutes of cooking.
