- 5 chicken thighs bone-in, skin-on
- 2 teaspoons baking powder
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
- Preheat the oven to 425 degrees. Use convection or air fryer setting if possible. Line a baking sheet with parchment paper or aluminum foil sprayed with cooking oil.
- Dry chicken thighs with paper towels to remove extra moisture.
- In a bowl, mix baking powder, paprika, garlic powder, salt, and pepper.
- Rub the spice mix evenly over each thigh.
- Lay the chicken thighs on the pan, leaving a few inches of space between each piece.
- Bake for 30-40 minutes, using convection or air fryer setting if available. Check for doneness at 25 minutes for boneless thighs.
- Once the internal temperature reaches 165 degrees, the chicken is fully cooked. Baste with juices from the pan.
Notes
- Do not use baking soda instead of baking powder.
- For extra crispy skin, place chicken thighs under the broiler for a minute or two, watching carefully.
- Cooking on a wire rack allows juices to drip down. Use foil for easy cleanup.
