Ingredients

  • 1 teaspoon baking powder

  • 3 large eggs
  • 1 cup granulated sugar
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 15×10 inch jelly roll pan.
  2. In a bowl, mix together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, beat eggs and sugar until thick and pale.
  4. Add pumpkin puree and vanilla extract to the egg mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Spread the batter evenly in the prepared pan and bake for 15-20 minutes.
  7. Once baked, remove from the oven and let it cool for a few minutes.
  8. Invert the cake onto a clean kitchen towel dusted with powdered sugar.
  9. Roll the cake with the towel and let it cool completely.
  10. For the filling, beat cream cheese, powdered sugar, and vanilla extract until smooth.
  11. Unroll the cooled cake, spread the cream cheese filling evenly, and roll it back up.
  12. Chill in the refrigerator for at least 1 hour before slicing and serving.

Notes

  • Make sure to use pure pumpkin puree, not pumpkin pie filling.
  • Store leftovers in the refrigerator for up to 3 days.
  • For a spicier flavor, add more cinnamon or ginger to the batter.
