Ingredients

  • 1 cup wild rice
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup mushrooms, sliced
  • 1 cup kale, chopped
  • 1 cup heavy cream (optional)

Instructions

  1. Rinse the wild rice under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat.
  3. Add the onion, carrots, and celery, and sauté until softened.
  4. Stir in the garlic and cook for another minute.
  5. Add the wild rice, vegetable broth, thyme, rosemary, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 45 minutes, or until the rice is tender.
  7. Add the mushrooms and kale, and cook for an additional 10 minutes.
  8. If desired, stir in heavy cream before serving.
