Ingredients

- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 cup potatoes, diced
- 1 cup corn, frozen or fresh
- 1 cup green beans, chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; sauté until softened.
- Stir in garlic and cook for another minute.
- Add vegetable broth, potatoes, corn, green beans, thyme, and parsley.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes.
- Season with salt and pepper to taste before serving.

- Feel free to add any other vegetables you have on hand.
- This soup can be made ahead and stored in the refrigerator for up to 3 days.
- For a creamier texture, blend a portion of the soup before serving.
