Description
This Chicken Souvlaki Recipe features marinated chicken grilled to perfection, served with fresh vegetables and tzatziki sauce.
Ingredients

- 2 lbs chicken breasts (about 4)
- 1/2 cup canola or olive oil
- 2 lemons – juice only (3 if lemons are not very juicy)
- 6 garlic cloves smashed
- 3 tbsp fresh minced dill weed
- 3 tbsp fresh minced parsley
- 2 tsp dried oregano
- 1 – 1.5 tsp coarse salt (more or less to taste)
- 1/2 tsp black pepper
- 6–8 Greek pita bread (warmed)
- 2 tomatoes (sliced)
- 1/2 red onion (sliced thin)
- 1/2 cup tzatziki sauce (more or less)
Instructions
- Combine all marinade ingredients in a bowl and whisk well. Taste for salt.
- Cut chicken into 1-inch cubes and place in a zip-top bag. Add marinade and mix well.
- Marinate chicken for at least 2 hours or overnight (not exceeding 12 hours).
- Soak wooden skewers in water for 45 minutes if using.
- Preheat grill to medium-high heat.
- Skewer chicken, fitting 4-5 pieces onto each skewer.
- Grill kebabs for 4-5 minutes per side, turning a quarter every time.
- Brush pita with olive oil and grill until heated through.
- Slice vegetables and arrange on a serving dish.
- Serve chicken souvlaki on warm pita with vegetables and tzatziki sauce.
- Alternatively, cook skewers in a preheated skillet, turning them every 3-4 minutes until cooked through.
Notes
- For gluten-free version, serve on gluten-free bread or pita.
- You can use dried herbs, just half the amount.
- Store leftover chicken in an airtight container in the refrigerator for 3-4 days.
