- 1 lb boneless, skinless chicken breasts
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup frozen peas
- 1 cup heavy cream
- 1/4 cup all-purpose flour
- 2 tbsp olive oil
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onions, carrots, and celery, and sauté until softened.
- Add minced garlic and cook for an additional minute.
- Stir in the flour and cook for 2 minutes.
- Add the chicken broth, thyme, rosemary, salt, and pepper, and bring to a boil.
- Add the chicken breasts and reduce heat to a simmer. Cook until chicken is cooked through.
- Remove chicken, shred it, and return it to the pot.
- Stir in the frozen peas and heavy cream, and heat through.
- Adjust seasoning if necessary and serve hot.
Notes
- For a thicker soup, add more flour or reduce the amount of broth.
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
