  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 2 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onions, carrots, and celery, and sauté until softened.
  3. Add minced garlic and cook for an additional minute.
  4. Stir in the flour and cook for 2 minutes.
  5. Add the chicken broth, thyme, rosemary, salt, and pepper, and bring to a boil.
  6. Add the chicken breasts and reduce heat to a simmer. Cook until chicken is cooked through.
  7. Remove chicken, shred it, and return it to the pot.
  8. Stir in the frozen peas and heavy cream, and heat through.
  9. Adjust seasoning if necessary and serve hot.
