  • 1 tsp thyme

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  2. Add diced chicken and cook until browned.
  3. Stir in carrots, celery, and potatoes, cooking for about 5 minutes.
  4. Sprinkle flour over the mixture and stir to combine.
  5. Gradually add chicken broth, stirring constantly to avoid lumps.
  6. Bring to a simmer and cook for 15 minutes until vegetables are tender.
  7. Stir in heavy cream, frozen peas, thyme, rosemary, salt, and pepper.
  8. Simmer for an additional 5 minutes before serving.
