Ingredients

  • 4 cups spring mix greens
  • 1¼ cups blueberries
  • ½ cup crumbled feta cheese
  • ½ cup dried cranberries
  • ½ cup chopped red onion
  • 1 cup chopped cucumber
  • 6 tbsp olive oil
  • ¼ cup balsamic vinegar
  • ½ clove garlic, minced
  • 1 tbsp honey
  • ¼ tsp salt
  • ⅛ tsp pepper

Instructions

  1. Whisk together olive oil, balsamic vinegar, minced garlic, honey, salt, and pepper to make the vinaigrette.
  2. Season the chicken breasts with salt and pepper. Grill over high heat for 6–8 minutes per side until the internal temperature reaches 165°F. Let rest, then slice.
  3. In a large bowl, layer the spring mix greens. Top with blueberries, dried cranberries, red onion, cucumber, feta cheese, and sliced chicken.
  4. Drizzle the vinaigrette over the salad just before serving.
