These Blueberry Soft Baked Bars are a delicious and healthy snack option, packed with wholesome ingredients.
Ingredients

- 110 g oat flour
- 50 g ground almonds
- 1/4 tsp baking powder
- 1/2 tsp cinnamon
- Pinch of salt
- 2 tbsp honey
- 2 tbsp coconut oil, melted
- 1 tbsp milled flaxseed or ground chia seeds
- 3 tbsp water
- 200 g frozen blueberries
- 2.5 tbsp chia seeds
- 1 tbsp lemon juice
Instructions
- To make the chia jam filling, add the blueberries to a saucepan with the honey and lemon juice. Cook gently while mashing the blueberries.
- Once mashed, remove from heat and fold in the chia seeds. Let it cool to set.
- For the dough, mix the milled flaxseed with water and let it set for 10-15 minutes.
- In a bowl, combine the oat flour, ground almonds, cinnamon, baking powder, and salt. Add the honey, coconut oil, and flaxseed mixture. Mix well.
- Divide the dough into two and roll it out between parchment paper to a 1/4 inch thickness. Cut off ragged edges.
- Spread the blueberry jam along the center of each rectangle. Fold the dough over the jam and press gently.
- Roll the log with the seam on the bottom and slice into 6 bars.
- Bake in an air-fryer at 180C for 10-12 minutes or in a preheated oven at 180C/160C fan/350F for 20-25 minutes until golden brown.
- Let cool before enjoying.
Notes
- Store in an air-tight container in the fridge for up to 4 days.
- Enjoy cold or reheat in the oven or air-fryer.
