Description

A delicious and easy Beef Gyros recipe that can be made in a slow cooker or Instant Pot.


Ingredients

  • 3 pounds beef chuck roast, sliced into thin 1/4-inch strips
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 tablespoons olive oil
  • 2 1/2 teaspoons garlic powder
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • 2 tablespoons fresh lemon juice
  • 5 soft pitas
  • 5 lettuce leaves
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1 English cucumber, sliced and halved
  • 1 cup plain Greek yogurt
  • 1 clove garlic, finely minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon vinegar
  • 1 teaspoon dried dill weed
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Combine all tzatziki sauce ingredients in a bowl and mix well. Refrigerate until ready to serve.
  2. For Slow Cooker Method: Trim large pieces of fat from the beef and slice into thin strips. Place in the slow cooker.
  3. Mix olive oil, garlic powder, oregano, cumin, thyme, lemon juice, salt, and pepper. Pour over beef.
  4. Cover and cook on LOW for 6 hours or until tender.
  5. Assemble pitas with lettuce, beef, vegetables, and tzatziki sauce.
  6. For Instant Pot Method: Place sliced beef in the Instant Pot.
  7. Mix 1/3 cup water with olive oil, garlic powder, oregano, cumin, thyme, lemon juice, salt, and pepper. Pour over beef.
  8. Seal and cook on High Pressure for 30 minutes.
  9. Let rest 15 minutes before releasing pressure. Adjust seasoning if needed.
  10. Assemble pitas with fillings and tzatziki sauce.

Notes

  • Tzatziki and vegetables can be prepped ahead and stored separately in the fridge.
  • Beef can be frozen before or after cooking. For best results, freeze it raw with the marinade, thaw, then cook.
