Ingredients

- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add the beef cubes and brown on all sides.
- Remove the beef and set aside. In the same pot, add onions and garlic, sauté until softened.
- Add carrots and potatoes, stirring for a few minutes.
- Return the beef to the pot, then add beef broth, red wine, tomato paste, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat to low and cover. Simmer for 2-3 hours until the beef is tender.
- Remove the bay leaf before serving.
Notes
- For a thicker stew, you can add a cornstarch slurry towards the end of cooking.
- Feel free to add other vegetables like peas or green beans.
- This stew tastes even better the next day after the flavors have melded.
