- 1 lb Chicken Thighs
- 2 cups Butternut Squash, cubed
- 1 cup Brussels Sprouts, halved
- 2 tbsp Olive Oil
- 1 tsp Salt
- 1/2 tsp Pepper
- 1 tsp Rosemary, dried
- 1 cup Quinoa, rinsed
- 2 cups Vegetable Broth
- 1 cup Mushrooms, sliced
- 1 tbsp Soy Sauce
- 1/2 cup Parmesan Cheese, grated
Instructions
- Preheat oven to 400°F (200°C).
- In a baking dish, combine chicken thighs, butternut squash, and Brussels sprouts.
- Drizzle with olive oil, salt, pepper, and rosemary. Toss to coat.
- Bake for 30 minutes or until chicken is cooked through.
- While chicken is baking, cook quinoa in vegetable broth according to package instructions.
- In a skillet, sauté mushrooms until golden, then add soy sauce.
- Once chicken is done, serve with quinoa and mushrooms on the side.
- Sprinkle with Parmesan cheese before serving.
Notes
- This recipe can be made with other seasonal vegetables.
- Adjust seasonings to your taste.
- Leftovers can be stored in the fridge for up to 3 days.
