Ingredients

  • 2 cups Butternut Squash, cubed
  • 1 cup Brussels Sprouts, halved
  • 2 tbsp Olive Oil
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 tsp Rosemary, dried
  • 1 cup Quinoa, rinsed
  • 2 cups Vegetable Broth
  • 1 cup Mushrooms, sliced
  • 1 tbsp Soy Sauce
  • 1/2 cup Parmesan Cheese, grated

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a baking dish, combine chicken thighs, butternut squash, and Brussels sprouts.
  3. Drizzle with olive oil, salt, pepper, and rosemary. Toss to coat.
  4. Bake for 30 minutes or until chicken is cooked through.
  5. While chicken is baking, cook quinoa in vegetable broth according to package instructions.
  6. In a skillet, sauté mushrooms until golden, then add soy sauce.
  7. Once chicken is done, serve with quinoa and mushrooms on the side.
  8. Sprinkle with Parmesan cheese before serving.
